Using immersion loading, the ASX-AKK system achieved the highest encapsulation efficiency (up to 11.47\u2009\u00b1\u20093.52 \u03bcg\/mg), significantly outperforming other loading techniques. The encapsulated ASX displayed improved thermal stability, withstanding pasteurization, and showed enhanced bioaccessibility rising 25.7-fold in simulated intestinal fluid and 77.6-fold in simulated colonic fluid without compromising AKK\u2019s natural adhesion to mucus.
